This is an extraordinary spirit from a highly innovative and at times challenging American distillery. Based in Virginia, this distillery is not afraid to be different, or original and more than happy to break a number of unwritten rules when it comes to producing wood aged spirits.
This rye, they can't call it whiskey as only used barrels are used for maturation, is distilled from 1/3 malted barley and 2/3 rye, all floor malted and lightly smoked with 60% applewood and 40% cherrywood. Double distilled and matured in used bourbon barrels with the addition of applewood and American oak chips and then finished in Cognac barrels. And boy, does that finishing barrels add a lustre to this spirit.
My rough notes read, "Big dose of sweet rainised brandy notes, spice, very pleasing. Great combo of dry grassiness and French oak spiciness, dried brandied fruits that just linger. Big ACE from me!"
Very, very limited.
