Blog Post Three: Now I'm getting the hang of this…

This rye spirit comes from a fascinating Virginia based, US distillery that is not afraid to break the rules of maturation...but in the most pleasing way. 100% floor malt from 1/3 barley and 2/3 Virginia grown rye that was smoked with 60% applewood and 40% cherrywood. Double pot distilled and matured in used bourbon barrels that contain both new and used applewood and American oak chips.
My rough notes read, "Soft lush nose, rye grassiness. Dry and grassy, with mid palate sweetness, subtle oak, lingering".
