Australian muscats can be big, bold, unctuously sweet beasts.  And when used for maturation with Aussie whiskies, the muscat flavours and sweet oak can over-dominate the spirit.

So maybe, finishing the malt in a muscat cask, might be the trick, to tone this big, buxomly sweet flavours down.

This is exactly what Mr La Forgia at 78 Degrees has done.  But get this, the casks held the muscat for over 20 years.

In his words, “Raisins and stewed prunes on the front palette give way to notes of cocoa pops. Dried apricot comes through late, with a tingling spice of black pepper.  The taste of dark fruit, along with some rich demerara sugar. A lingering note of clove and black pepper, along with a faint smokey note”.
