So what is Palo Cortado sherry? According to Sherry Notes, “Palo Cortado is an intermediate type of sherry and probably the most ambiguous of all. It should have the aromatic refinement of Amontillado combined with the structure and body of an Oloroso. In short: Amontillado on the nose, Oloroso in the mouth. And it is indeed the rarest of all sherry varieties”.
My rough notes, “Big fresh malt and oak, nutty, barest hint of red fruits.
Great length, lively, biting, crisp malt, sweet lush buttery oak.
Great mouthfeel, the crisp malt dominates. Gentle oak finish, lingering grainy malt.
It’all about the malt! Palo Cortado? Must get a bottle”.
