The malt that breaks all the rules. And the malt that I would never turn down, if offered a dram.
The broken rules? A massive distillery. Most of the spirit is tankered to the mainland. And then it is filled on the mainland. And most of the matured stock is destined to go into a lot of Johnnie Walker bottles.
Massive. Highland matured. Lost in blends…And ultimately, one of my favourite Islay peated malts.
And I really have not had in my 25 year career a bad one. And for me, it’s all about the balance. Peat, malt, oak and spirit from Caol Ila just work so well together.
