From the famed Ring Of Kerry comes this charming new distillery, from Dingle, called Dingle.  Founded in 2012, by three mates that were at the forefront of the craft brewing movement in the Republic of Ireland.

Small in size, quality in mind and an enthusiasm for small batch, cask strength releases, it does remind me of the ethos of many an Aussie malt whisky producer. And their head distiller has a pretty fancy CV: bottling manager at William Grant & Sons, Distillation Manager for Glenfiddich, Balvenie and Kininvie Distilleries, Distillery Manager and Master Distiller at Glen Moray.

While the Core malt essentially will remain the same, the Batch releases from Dingle will change from year to year.  So, welcome to Batch five: triple distilled single malt produced in a pot still with the oak being an intriguing mix of ex Bourbon, PX and Madeira casks.  First released in 2020.

From Big G, “I found this to be dense and sweetly flavoured, with the 46.5% ABV keeping it alive, as there is a fair whack of oak in it”.

From MOreDramsLessDrama, ” Lightly salty and peppery arrival, with the sourness of grapefruit juice and the faint bitterness of an oak log. Cinnamon and vanilla dusted rhubarb compote, chocolate with fleur de sel, dusty old books. Citrus notes all along underlining a fresh palate. A slight oakiness and citrus notes linger with that dustiness feeling before slowly fading away, with a good length”.

Official notes read, ” The heavyweight PX and Madeira casks punch through with sun dried raisins, creamy blossom honey and tiramisu laced with vanilla.  The sweet spice from the bourbon cask takes the curtain call rounding off the taste experience perfectly. Warm, lingering and mellow”.
