Holyrood Charmed Circle 2020 Strong Waters Chevalier Spirit Drink

From that relatively new distillery in Edinburgh, comes this brand new spirit that is part of a research project into re-introducing old barley varieties and flavours back into  modern distilling.

The project is been undertaken by research staff at Herriot Watt University but backed by Holyrood distillery.

In this edition, that old favourite of distillers 200 years ago, Chevalier, has been bought back to life as a sub two year old spirit.

Official notes read, “As a new make, Chevalier presents a creamy dairy quality that is heightened with the addition of wheat spirit creating an incredibly rich mouthfeel”.
