From that new upstart distillery in Edinburgh, Holyrood, comes their first official spirit: gin.  And given their penchant for thinking out of the square, this gin is no ordinary gin.

Official notes read, “Height Of Arrows is a gin that has been created with whisky in mind. Drawing on the idea that whisky’s myriad of flavours rely on a handful of ingredients, Height Of Arrows rejects the idea of numerous botanical additions.

In the same way as using toasted malt, roasting spices has long been known to extract more complex flavour. So in our Heavy recipe we have roasted the juniper, extracting more flavour to build a gin with big and robust flavour. A small addition of sugar after distillation brings balance, and a subtle sweetness”.
