Holyrood New Make S01 Brewers X Distillers Yeast
Opening their doors in 2019, Holyrood is Edinbugh’s first distillery to open in the capital in over a 100 years. Specialising in innovative distilling techniques, it was founded by Dave Robertson, ex Macallan and the Kelly family from Canada.
As the distillery says, “As a new wave Scotch whisky maker we aren’t constrained by 200 years of traditional production”.
So, opening in 2019 means that they have yet to release a whisky, but they were not afraid to release to the public a four of their components that will eventually will be their new make. And then their whisky.
In this case it’s all about the yeast, Brewer’s crossed with Distillers yeast.
Official notes read, “NMS01 is the first of our Brewer’s series of new makes. Holyrood is focusing on Edinburgh’s heritage as a brewing city as inspiration for creating our base building blocks of flavour. Here we are showing how Brewer’s yeast and Distilling yeast play well together. The ale yeast we use here is an American Ale yeast that adds a clean mouthfeel with notes of peach and soft citrus. This adds additional flavour to our new make against our Distiller’s Yeast, M Strain, which is super efficient at converting fermentable sugars.”
