Description
This maize (corn) based whisky was a complete surprise. I was expecting a more typical US corn whiskey: sickly sweet.
What you do smell and taste is the flavours of fresh corn including that unique smell of the corn husks. Medium to full body in style with long, lingering palate of light kitchen spice, cinnamon and nutmeg and creamy oak texture. The spirit is lively.
Utilising four different strains of maize, fermentation takes place in stainless steel while distillation is done in a copper pot still. Production and ageing techniques were helped with the assistance of a Cognac producer. Maturation took place in both French and American oak.
Official notes read, “Creamy texture, combination of Neapolitan custard and cinnamon. Dry finish with notes of maples syrup and cherries. Slight pleasant acidity and hints of tobacco in the aftertaste”.
