Lindores Abbey distillery, a relatively new distillery, founded 2017, based in the Fife, Scotland And I’m told reliably, that it is pronounced Lind-Doors. And now coming into full production.
The Cask of Lindores range, is where we can explore the different roles a variety of casks play in the maturation of Lindores spirit. I suspect this batch is part of the second release of this series.
And for this edition, it’s all about the use of rejuvenated whisky casks, as STR stands for Shaved, Toasted and Re-Charred. The process of taking an old and what should be a tired old cask and giving it a new life. The process was developed by the noted whisky industry innovator and pioneer, Dr Jim Swan.
From The Spirit Specialist, “this limited edition has distinct red berry notes alongside creamy toffee and sweet spices. There’s a nice bite on the finish thanks to the increase in ABV, but it doesn’t overpower the complex notes that dance over the palate”.
Official notes read, “Sweet and spices. Mellow plums and red berries, treacle, cinnamon spice and a pleasant woody smoky note. Very smooth, silky texture | Finish – Medium to long with spices, honey and caramel notes”.
