North Star 2008 8yo Undisclosed Islay Single Malt Series 2 Sherry Finish
North Star are an indie bottler that started up in 2016. And from the buzz I hear about the brand around Sydney and Melbourne, their releases have certainly caught both the trades and the public’s whisky attention.
And this is one of their “stars”.
Young, mainly bourbon cask matured with the addition of sherry octave maturation at the end.
From WhiskyFlu, ” Hot and thin and evidently young. Soft medicinal peat smoke is balanced by sweet barley sugars. Bit of citrus now on the sides of the tongue. Touch of burnt rubber and black pepper emerge. With water the pepper, smoke and salt amplify. It now gets little oily and fruity. Notes of sultanas, walnuts and some varnish in the background. Sooty and peppery with a long and lingering finish”.
