Spring Bay Bourbon Cask Tasmania Single Malt Whisky

First of all a big thank you Spring Bay for producing a 700ml bottle!  As it appears that the standard size for Tassie malts is still 500ml.

Founded in 2015 buy Cam and Suzy Brett and when their first malts came out in 2017, I was mightily impressed. Finally, a Tassie producer has produced a malt with very careful oak handling.  And you could taste the malt.

So this gentle 46% still has plenty of sweet malt and vanilla oak flavours and I agree with the distillery’s notes: warm and comforting.

Official notes read, “From a bright and sweet opening the flavours build across the palate to a rich, clean alcohol-driven crescendo culminating in a big, warm and comforting glow of spicy tannin hints and peach flesh.  Long and warm with the afterglow fading into semi-sweet caramel and lingering stone-fruit tingles”.
