Woodwater Tawny Cask Release 1 South Australia Single Malt Whisky

I have to admire Mr Justin Mok, after the travails in trying to build a distillery, he couldn’t wait any longer.  So he hired a still and proceeded to make some whisky.

All above aboard, and all approved by the appropriate authorities.

This tawny port finish malt was part of his first release.  The cask was sourced from Chapel Hill winery and it’s French oak.  Crystal and pilsner malts were used in the mash.

It was aged for 3 years but upon tasting it, I can see why Mr Mok released it at such an early age. The palate is rich and seductive, especially with the raisined fruit and spice laden oak. Dark fruits and oak flavours abound.

Official notes read, “Initially quite soft. Marzipan and raisins upfront that quickly lead into a warming mouthfeel with more dark chocolate and then big oak profiles. Pepper and spice. Light treacle, oak, orange rind and dark choc”.
